GREEN BRINJAL TOMATO GRAVY

INGREDIENTS :-

Green Brinjal - 6 to 7
Onion - 1 cup
Tomato - 1 1/2 cup
Oil - 1 tbsp
Turmeric Powder - 
Red Chilli Powder - 1 1/2 tsp
Coriander Powder - 1 tsp
Salt to taste

METHOD :-

1. Chop brinjal into cubes and place in salt water for 15minutes.
2. Heat oil in a pan and add onions, saute until it turns transparent.
3. Now drain and add brinjal, salt and turmeric, and stir for 2minutes.
4. Add red chilli powder, coriander powder and stir for 2minutes and add tomato and half cup water. Cover and cook.

Serve hot with roti.

CHETTINAD CHICKEN MASALA

INGREDIENTS :-

Chicken - 1 lbs

Onion - 1 cup
Tomato - 1 cup
Ginger - 1" long
Garlic - 2 pods
Oil - 1 tbsp
Salt to taste
Cinnamon - half inch 
Clove - 3
Dry red chillies - 6 to 8
Cumin seeds - 1/2 tsp
Coriander seeds - 1 tsp
Fennel Seeds - 1 tsp
Peppercorn - 1/2 tsp
Cilantro - 2 tbsp

METHOD :-


1. Heat a pan and dry roast red chillies, coriander seeds, cumin seeds, fennel seeds and peppercorn very slightly until you get a nice aroma.

2. After the dry roasted ingredients cools down, blend it to make a masala powder.

3. Heat oil in a kadai, add cinnamon, clove and onion.

4. When the onion turns transparent add ginger and garlic finely chopped or u can use 1 tbsp of ginger garlic paste.


5. Now add the blended masala powder, saute for a minute and add tomato, 1/4 cup of water, a tbsp of cilantro, salt and let it cook for 2-3 minutes.


6. Add chicken, remaining cilantro, cover and cook until the chicken gets cooked well.
7. Garnish with cilantro.
